The Hackett House Spring 2012 Cooking Classes are held on the beautiful patio at Hackett House…Complete with Fresh Linens, Candles, and Complimentary Wine Bar. The Doors open at 6pm for gift browsing and Happy Hour. Classes begin at 6:30 PM.
These Chefs are being highlighted during this “Centennial Series of Cooking Classes” on the following dates:
March 8th-Kim Lahn, Food Blogger and Chef
Chef Kim Lahn’s passion for cooking and her desire to find a healthier way of eating after beating breast cancer gave birth to her blog: Veg-In-Training. Her menu will feature locally grown produce from Horny Toad Farms in Phoenix and will include Red Inca Quinoa Sweet Potato Cakes with Tomatillo Avocado Sauce; Fennel and Savoy Salad with Arizona Orange Cilantro Dressing garnished with Cocoa Toasted Pepitas; Chorizo and Cornbread Stuffed Chiles with Guajillo Chile Sauce served with a Local Squash and Kale Bake; Carmelized Wilcox Apple Stuffed Blue Corn Crepe with Sweet Cashew Cream; and Maple Glazed Arizona Pecans and Prickly Pear Balsamic Syrup.

Bob Trick, chef/owner of House of Tricks Restaurant, will introduce his Chef, Kelly Fletcher, who will conduct this class. His menu includes Frisee, Micro Arugula and Micro Radish Salad with Shaved Manchego, Anjou Pear, Cranberry, Pepitas and Pepper-Sherry Vinaigrette; Seared Fromage d’Affinois with Strawberry Preserves, Rosemary Syrup and Crusty Ciabatta; Ancho Chile Seared Rare Ahi Tuna on White Bean-Guajillo Ragou with Orange-Chipotle Honey Aioli, Pepitas and Micro Cilantro. Complementing wines will be served with each course.

Hackett House welcomes Chef Lee Hillson from The Royal Palms, T. Cooks Restaurant. His special spring menu includes a Salad of Peas with Mint, Goat Cheese, Walnuts, Frisee and Watercress; an Entree of Slow Roasted Lamb Stuffed with Euro Cream on Roaster Vegetables; and Dessert featuring Vanilla Panna Cotta topped with Melted Berry Fondue.
